Our story
Ashley Hills Estate is a family-owned boutique cellar door at the foot of the Willunga Hills. The Giles family has lived and worked in Willunga for over 100 years.
The cellar door sits on a working sheep farm, right beside our working shearing shed. Paul Giles — Vietnam veteran, sheep farmer and grower of premium McLaren Vale fruit — is usually behind the bar pouring the reds and telling the local history. His wife Wei makes the dumplings by hand from her family's Northeast Chinese recipes.

At the cellar door

Sparkling, sparkling rosé, Sauvignon Blanc, Merlot, blends, and fuller-bodied Shiraz and Cabernet with some age on them.

Our own label — Golden Ale, APA, chocolate Oatmeal Stout, the chilli-chocolate “Spicy Sheep”, Bomb Aimers Bitter, cider and ginger beer.

Our own award-winning gin, made with native and premium botanicals — plus fortifieds for a slow finish on the deck.

Authentic Northeast Chinese dumplings, folded by hand and cooked to order with Wei's chilli oil. Made for rosé and stout.

Birthdays, clubs and wine-tour buses are welcome. Let us know your numbers and we'll have the tastings and dumplings ready.

Timber deck and lawn looking over the vines, the sheep paddocks and out to Gulf St Vincent. Bring the family and stay a while.

Private functions
A working shearing shed with real country character — dressed up for the function of your choice. Birthdays, club days, long lunches and corporate get-togethers, with estate wine, Baa Baa beer and platters of Wei's dumplings.

How it works
Walk-ins are welcome on weekends. For groups, buses, functions or a set arrival time, send a booking request below.
Paul will call or text to confirm your date, numbers and anything special — from dietary needs to a birthday.
Work through the wines and Baa Baa beers at the bar, then settle in on the deck with a plate of Wei's dumplings.
Bottles of estate wine, Baa Baa beer and gin are available to take away from the cellar door.

Dumplings and Rosé - the perfect combination! Authentic dumplings from Northeast China. Interesting flavours - chicken & water chestnuts, lamb & fennel, prawn, eggs & leeks, and many more. Wine, dumplings, and view. If you are in McLaren Vale, you need to try this. We will certainly visit them again!
Great hosts. Great views. Quality wines and beers. Paul behind the bar has a lot of stories, his wife Way (apologies if wrong spelling) hand makes and cooks stunning dumplings. Great place to visit.
A decent selection of sparklings, reds and a port and Muscat. The Merlot and blend are medium weight while the shiraz and cabernet are fuller bodied and nicely aged, with 2014 vintage on the list in 2023.

Saturday and Sunday, from 11am to about 4:30pm. We occasionally close for holidays or family events — those closures are always posted on our Facebook page, or you can call Paul on 0412 203 530 to check.
Not for a casual tasting — walk-ins are welcome on weekends. We do ask groups, bus tours and anyone wanting dumplings for a larger table to book ahead, so we can have enough ready.

Yes — Wei's handmade Northeast Chinese dumplings, served hot with her chilli oil. Fillings rotate between beef, pork, lamb, prawn and vegetable combinations. If you have dietary needs, tell us when you book.
Yes. The working shearing shed can be dressed up for the function of your choice — birthdays, club days, long lunches and corporate get-togethers — with estate wine, Baa Baa beer and dumplings. Functions can be held on other days by arrangement; send an enquiry through the booking form.
We do — tour buses regularly stop in on weekends. Book ahead with your numbers and arrival time so we can have tastings set up.
Absolutely. There's lawn to run around on and plenty of room on the deck. Under-18s can't taste, of course — but they'll love the sheep.
Yes — bottles are available at the cellar door. To have something set aside for pick-up, choose “Wine, beer or gin pick-up” in the booking form and list what you're after.
